Gluten Free Green Thai Curry Soup


This comforting bowl of spicy cuddles is perfect for the cold and wet winter we are in just now. Here’s my secret recipe.


2 white onions (diced)
3 cloves of garlic (finely chopped)
1 inch squared of ginger (finely chopped)
100g of spring greens or pak choi (cut into strips)
1 red chilli (sliced into rings)
2 tbsp miso paste (check brand is gluten free)
2 tbsp mirin
2 tbsp rice vinegar
4 tbsp oyster sauce
2 tbsp tamari sauce (gluten free soy sauce)
Vegetables and meat of your choice – I used chicken, peas, sweetcorn, green beans, sugar snap peas, carrot cubes and mushrooms.
Rice or rice noodles to serve if desired.


1. Heat wok with a small amount of water (100mls approx). No l is used in this recipe as it gives the final dish a less appealing appearance.

2. Once the wok is heated and the water is beginning to bubble add everything except the meat and vegetables.

3. Allow sauce to reduce and combine

4. Add meat. Ensure every surface is sealed.

5. Add vegetables.

6. Add ½ pint of water per person.

7. Allow to boil until chicken is thoroughly cooked.

8. At this point it is your choice of accompaniment. Add rice noodles directly to the broth, ladle over rice in a bowl or simple have on its own.

9. Enjoy.

The Orange Headband

2 weeks ago I took part in Tough Mudder Scotland in support of Scottish Spina Bifida Association. I managed to raise £115 for them which is awesome and I earned my headband! Yey! I hobbled clambered and carefully climbed my way round the course, completed all the obstacles except 2 (although it did take a lot of assistance and encouragement from the staff and my team <3) The staff were wonderful and helped a little with movement when it got a bit tough and extra water. I cannot thank them enough – they were amazing!

James was an amazing support as always I wouldn’t have signed up or crossed the finish line.

It took me a while to recover – I still am in bits of me. But that orange headband is mine and boy did I earn it.

Gluten Free Food Review – Kallo Rice Cakes

Oft! I have literally not found a Kallo rice cake that has not been awesome to eat. I will update this list each time I try a new one but so far here is my feedback on the tasty ones I have tried so far.

Chocolate Thins with Caramel Pieces – So, so good with a cup of coffee. Kurbs the chocolate biscuit craving and tastes awesome.

Lightly Salted Plain Rice Cake – Really nice on their own; but I have popped various toppings on them too. My favourite being hummus and a little chilli oil.

Quinoa and Seeds – I had these with some cream cheese and a sprinkling of spring onion. They were lovely.

Caramel – Another one for with that mid afternoon cuppa to keep the energy levels up.

The Ultimate List – IKEA Cafe Restaurant For The Coeliac

It’s tradition. If you go to IKEA, you get food. Swedish meatballs, Daim cake, hot dogs – everyone has they’re poison.

Mine is krokant cake. And guess what? It’s gluten free! Oh yeah!

Here is a list of all the gluten free goodies you can get in IKEA’s restaurant (please note that you should still chat to staff as each store although standardised can have different items).

Soups: Chipotle Sweet Potato, Three Bean Chilli, Tomato with Garden Vegetables.

Salads: Greek Salad (no dressing), Marinated Salad, Najad Salad, Swedish Tapas.

Breakfast: Bacon, Scrambled Eggs.

Mains: None are gluten free

Salad Bar: carrots, celery, cucumber, lettuce, mushrooms, onions, peppers, radish, spinach, tomatoes.

Salad Dressings: None are gluten free.

Sandwiches: None are gluten free

Sides: Coleslaw, Vegetable Medallions, Steamed Carrots, Steamed Vegetables, Potato Chips, Organic String Cheese.

Kiddies Meals: No gluten free options

Desserts: Almond (Krokant) Cake (with chocolate butterscotch or dark chocolate), Blueberry Cake.

Beverages: Blueberry Drink, Bottled Water, Coffee, Diet Pepsi, Elderflower Juice Box, Lemonade, Organic Lingonberry Juice Box, Organic Low Fat Chocolate Milk, Organic Low Fat Milk, Mountain Dew, Orange Juice, Pepsi, Pink Lemonade, Rosehip Drink, Sierra Mist, Sparkling Apple& Lingonberry Drink, Organic Sparkling Apple Drink, Sparkling Pear Cider, Sweetened Or Unsweetened Tea.

Bistro: No gluten free options.
