Ingredients:
3 litres of water
1 lb (450g) beef mince
2 onions (diced)
4 carrots (diced)
1 leek (diced)
1 turnip (diced)
Parsley (I used fresh)
1 Bay leaf
1 sprig of thyme
1 clove of garlic (minced)
Pinch of salt
Pepper (to your taste)
1/2 cup of rice
Method:
- Bring water to the boil.
- Add all vegetables and the beef mince.
- Cook for 15 minutes – skimming any froth that may appear.
- Add rice, parsley, clove, bay leaf, garlic, salt and pepper to the pan.
- Allow to simmer for 50 minutes – skimming froth as required.
- Remove bay leaf and clove from the pan before serving.
- Serve.
